Diz's "Egg" Salad Sandwich & Prince Dressing

Happy New Year!!! The holidays are finally over (I think)...
and what is my New Year's Resolution??? More exercise, more flavor, less soy, less laziness! Of course, today I gave in to the wondrously convincing taste of an "egg" salad sandwich (that tastes different every time because I keep changing the recipe), and had to whip up a small batch of my favorite dressing--Prince Dressing--from Soul Vegetarian. I had cleaned out the fridge and wiped down the whole kitchen and re-stocked the veggie drawer for the next few days...since I'll be posting later on the first meal I've cooked since being back, I'll make this a short post!

Here's the list of ingredients to the "egg" salad I whipped up in a couple minutes and slathered on some fresh baked multi-grain bread and also the recipe for Soul Vegetarian's awesome Prince Dressing that I used on some beautiful red and green oak lettuce.

Diz's "Egg" Salad:
(no measurements, just experiment!)

drained, squeezed, crumbled firm tofu
expellor-pressed veganaise
grated carrot
nutritional yeast
minced dried onion
garlic powder
turmeric
paprika
prepared mustard
celery seed
thyme
pepper
pinch of salt

Mix all the ingredients together and refrigerate until ready to eat!

Prince Dressing:
(I bow to the talented Mrs. Yafah Asiel!)

1 large garlic clove
3 T. olive oil
4 T. nutritional yeast
1 t. tamari or nama shoyu
about 1/4 cup water

Blend. That's it.
